Apple Cinnamon Oatmeal Muffins 🍎
vegan, gluten-free, no refined sugar
A soft, cinnamony apply center and a crumbly, melt-in-your-mouth oatmeal streusel topping. These muffins make it 100% acceptable to have dessert for breakfast.
📌RECIPE📌
-2 apples (chopped into small cubes)
-1 small banana (or 1/2 a large one, or replace with 1 egg)
-1 cup milk of choice
-1/4 cup maple syrup or honey
-1/4 cup coconut oil
-1 tbsp vinegar
-1 1/2 cups oat flour
-1/4 cup rolled oats
-1 tbsp baking powder
-1 tsp baking soda
-1 1/2 tsp cinnamon
-pinch of sea salt
🧁for the crumble🧁
-1/4 cup oat flour
-3 tbsp rolled oats
-2 tbsp coconut oil
-1 tbsp maple syrup/honey
-1/2 tsp cinnamon
🍎instructions🍎
-preheat oven to 200C
-mash the banana in a bowl and whisk in the wet ingredients
-add the dry ingredients to the same bowl and mix just until fully incorporated
-fold in the chopped apples
-transfer the batter to your muffin tray (lined with cupcake liners or brushed with oil) and fill each one 3/4 of the way
-mix the crumble ingredients in a separate bowl and crumble it on top of each muffin
-bake for 5 minutes, then lower the heat to 180C and bake for 18-20 minutes
