Gluten Free Chocolate Chip Cookies


Ingredients

  • 3/4 Cup + 2 T. Brown rice flour

  • 1/4 Cup Coconut Flour

  • 8 T. (1 stick or equivalent substitute) Butter

  • 1/2 t. Baking Soda

  • 1/2 Cup Light Brown Sugar

  • 1/4 Cup Sugar

  • 1 Egg (or equivalent)

  • 1 1/2 t. Vanilla extract

  • 1/2 Cup Mini Chocolate Chips

Instructions

  1. Preheat oven to 375 degrees.

  2. Blend sugars and butter.

  3. Beat in egg and vanilla.

  4. In a separate bowl mix the flours with Baking Soda.

  5. Blend into butter and egg mixture.

  6. Stir in chocolate chips.

  7. Drop by spoonful onto parchment paper two inches apart.

  8. Gently flatten with back of spoon.

  9. Bake 12 minutes or until golden brown.

  10. Will be nice and crunchy and not too sweet.

  11. Enjoy!
