Lentil Taco Recipe
Serves 8
Ingredients
1 1/2 c French or green lentils
2 tbsp extra virgin olive oil
1 tsp garlic powder
1 tsp ground cumin
3/4 tsp Himalayan sea salt to taste
Fresh ground pepper
1/2 small head of lettuce
1/4 c lime juice
Organic corn tortillas or taco shells
Cilantro, chopped
Salsa (store-bought or homemade)
Avocado, sliced
Instructions
Put lentils in a pot with 6 cups of warm water and bring to a low boil.
Boil for 15-20 minutes then drain.
Add olive oil, garlic powder, cumin, sea salt, chopped cilantro, and lime juice to lentils.
Thinly slice lettuce.
Warm tacos per instructions.
Add lentil mixture to tortillas/tacos.
