Easy Tomato & Spinach Frittata Recipe
Ingredients
6 eggs, lightly beaten
2 cups fresh spinach
1 cup cherry tomatoes
1 clove garlic, minced
Sea salt and ground pepper, to taste
Handful of shredded cheese
Additional vegetables, if desired (onions, broccoli, mushrooms, zucchini, sweet potatoes, etc.)
Directions
Preheat cast iron skillet on medium heat, swirl oil to coat
Add garlic and onion if desired, cook for 3 minutes
Add remaining vegetables and cook additional 5 minutes, stir occasionally
Preheat oven to 350 degrees
In a medium bowl, whisk eggs, salt and pepper
Turn off heat under skillet and sprinkle vegetables with half of the cheese
Cover with eggs then sprinkle remaining cheese on top
Bake for 20 minutes
Broil until golden brown on top
Let cool then serve and enjoy!
