Cruciferous vegetables are unique because they are rich in sulfur containing compounds like glucosinolates, which support detoxification, and indole-3-carbinol that help reduce the risk of breast, colon and lung cancer. Not only that, but collard greens are rich in vitamins A and K and are also a great source of soluble fiber. When you add collard greens to you diet, you reduce inflammation, cure digestive conditions, detox your body, and boost your cardiovascular health!

Just a reminder that when you buy collard greens, it is important to choose the organic option. Conventionally grown greens are often contaminated with concentrations of insecticides that are considered to be highly toxic to the nervous system. I find them easy to grow and love picking what is for dinner from my own yard! Additionally, avoid eating these leafy greens if you have a history of gallbladder issues because of the high oxalate levels or if you have hypothyroidism, do not eat them raw.
