Paleo Sweet Potato Chicken Soup with Grass-fed Bone Broth
Ingredients:
3 tbsp pastured butter
3 cloves garlic, diced
4 organic sweet potatoes, skinned & chopped into bite-sized pieces
1 stalk organic celery
1 organic onion
3 large organic carrots
3 cups chopped organic spinach, red or white
1 ½ lbs raw grass-fed chicken thighs, chopped
4 cups grass-fed bone broth
2 tsp paprika
2 tsp thyme
2 tbsp fresh chopped parsley
Sea salt & pepper to taste
Directions:
Saute onion, celery, carrots, and garlic in a pain with melted butter for 5 minutes on medium heat
Add raw chicken pieces & spices, keep stirring until chicken is browned and onions are soft
Pour into large pot
Add chicken broth, sweet potatoes, & cabbage and simmer for 30 minutes on medium; stir occasionally
Serves 3-5
